Chocolate Bark Sandwich

I’m in the process of eating my way through the contents of my pantry (yes I like to call my small cupboard of delicious food a pantry) as we are set to jet off home to Ireland this weekend for the Christmas holidays. It always amazes me the amount of food that builds up in just a short few weeks. How much food can one foodie eat? A lot, it seems! We have been kitting out our new abode with all the necessities since we moved in just 5 weeks ago and I have obviously made sure we had emergency supplies of everything. Upon opening the fridge and pantry, I discovered I have about 4 days to complete the scoffing.

Oh lordy these are good! A few simple ingredients and a couple of hours of waiting and you have a decadent little treat for your Friday. Perfect to greet the kiddos with when they storm the door down at hometime.

Date, Almond and Cacao Nib Granola Bars

I was so excited about receiving a copy of ‘The Surf Cafe Cookbook’ a few weeks ago in the post. I was following Jane’s updates on Facebook about the book’s progress and when the publishing date came around, I was so excited. Photos from their launch night looked amazing and were full of familiar Sligo faces that I miss dearly. I was wishing I had been there. So you can only imagine how thrilled I was to get a copy in the post. I dived right in and by the time T arrived home, I was a blubbering mess. The book is stunning. Pictures of home, the surf and the food. I miss it all!

Kitchen Sink Granola Bars

A couple of weeks ago, I finally admitted that I was injured. Something I didn’t want to as the football season had just started and I was loving being part of the team and on top of that, being active is a big part of my lifestyle. I was training with a great bunch of girls and an excellent coach to lead us. However, on the night of our first match of the season, I was standing on the side line about to go on with a searing pain going through my legs. I lasted about 10 minutes and then I was done. The following week I attempted a go at training but it was short lived and I haven’t been to a training session in two weeks. So, I have been taking it very easy the last few weeks, lots of walking and Iyengar yoga, visits to the Osteopath and I’m on the road to recovery.

Ballymaloe Inspired Muffins

This weekend brings about my very first road trip in Australia. Having been here for 7 months, we haven’t gotten much of a chance to do any traveling with work and the price of flights out of Perth is astonishing. So, with the South West Craft Beer Festival taking place in Margaret River this weekend, myself and Mr. T and Jacqui from Where The Wind Blows Her and her beau are high tailing it down south for a couple of days.
